Limes contain a rich supply of vitamins and minerals and d-limonene found in citrus oils. Lime has a stronger flavour and greater acidity than lemon, but their essential oil has a similar fragrance and the same properties and can be used in the same way. The oil is obtained by expression of the fruit rind of the unripe fruit
*Lime oil distilled from the whole fruit has a harsh, bittersweet aroma caused by chemical breakdown of the citral content, from the heat used in the process, but it is not photopic
